My go-to meals

Happy Monday!

Today is the first day I’m looking after Theo and Anwen sans help.  Just me, a crazy toddler and a cuddly newborn.

I’ve actually found myself with a little spare time right now as both children are napping.  I’ve been itching to get back into blogging.  Since having Anwen my taste buds have returned to normal; and I have a voracious appetite thanks to breastfeeding and no longer having a baby squashing my stomach space.  The only problem is that whilst I wish to blog, I haven’t had chance to try out any new recipes or create any.  I also have no idea when I’ll next get the chance to indulge in my love of food and recipe creating/sampling.  However, I thought I’d share some of my go-to meals that I’ve been quickly chucking together whilst trying to look after a newborn and a toddler.

You’ll probably recognise these recipes from the blog before.  But sometimes I think it’s good to have some quick and easy recipes documented in one place so you can refer back to them easily.

Chickpea Ratatouille

Love, love, love this recipe.  It’s super easy and you can forget about it for an hour whilst it’s cooking in the oven.

Thai Red Chickpea Curry

photo 1Another simple recipe that comes together in no time at all.

Roasted Veg with Accompaniment (Pasta/Tofu/Veg Sausages)

There’s no recipe for this one.  I just chuck a load of veg and potatoes in a roasting dish, season with smoked paprika and an italian herb blend, pour a generous amount of olive oil over them and put in the oven for an hour.  I love roasted veg at this time of year; cannot get enough of them.  I hate cooking pasta for some reason so Tom’s always on pasta duty, which means using a jarred marinara sauce that Tom pimps up with various seasonings.

Jacket Potato with Peas and Sausages

Self explanatory.

Fajitas

Again, self explanatory.  We just buy a fajita pack and add red onion, a pepper and baked beans to the spice mix and serve with salad.

Tempeh, Corn & Rice

I love this recipe by Elise.  But unfortunately Tom’s not a fan of tempeh so I don’t have this as often as I’d like.

For the record, the images above are not representative of my current portion sizes.  Man, breastfeeding makes me starving!  All.the.time.

Now I’m just really looking forward to adding some new recipes to my repertoire.
