Bites and Pieces – Veg

Thanks for all the congrats on the job!  I really appreciate them. I ordered my new uniform today- so excited to be out of my student nurse uniform.  I’m looking after my own patients now so I’m in a strange limbo period.  However, there’s still lots to learn so I’m trying to make the most of this transition time.

Since the stress in my life is easing my IBS has been proving, hurrah.  I’ve been experimenting with my diet a bit but only to be reminded that limiting FODMAPs and eating a pre-dominantly vegan diet is the best way to manage my IBS (regardless of how stressed I am).  Phew.  And mentally I feel so much better for it.

I’ve found loads of pictures on my camera but I won’t bore you with them all.  Here are  few of my fave veg-based meals that brighten up the grey, wintery days.

Does anyone else feel better when vegetables are the stars of the show for most of the time?

I’ve been incredibly lazy with packed lunches but over the past week I’ve been trying to get back into the swing with my salad boxes.

However, the colder it gets the less I crave salads and the more I crave soups, roasted veg, vegetable stews and other more heartier fare.

What about you guys?  Salads or stews when winter rolls by?

  1. for sure warmer foods. i am a big fan of throwing soups stews and chilis over a bed of greens too though. 🙂


  2. I’m still loving my salads for lunch but I’m loving raw kale and tougher greens when I can get them! I’m also loving stuff like lentil and root veg stew and broth, I have a huge bowl in my fridge that I’m going to enjoy with some of elise’s seitan sausage!


  3. MMm, veggies!

    I am not that much of a salad fan unless there’s a lot of hummus involved, and I always feel that the individual flavours of the veg gets lost in stews. Roasted veggies, however? I’ll eat them, spring, summer, autumn and winter!

    I would happily eat everything on this page 😀

    Great that your IBS is improving too – food does play a part, but I suspect that stress is the biggest negative influence of all.



  4. Veggies are nearly always the stars of the show for most of my meals (perhaps with the exception of breakfast). I feel worse if I have a few days where I can’t eat them as much.

  5. I definitely push salads away when winter rolls in. Where I live, it’s too damn cold!


  6. Mmm all of your food looks delicious, I love all of the bright colours!
    Veggies are definitely the star of the show with most of my lunches and dinners when i’m at uni, I feel so much healthier and happier when I’m eating lots of veg 🙂
    I definitely crave warmer dishes like roast veg and stews in the colder weather!
