A productive start to the year?

After my 3 month blip at the end of last year, I’m feeling pretty much myself again.  I’ve missed me!  I’m back to loving my food and eating without concern (helps that it’s vegan and my IBS isn’t as bad).

As it’s a monday, I thought today would be a good day to visit the books and get some studying done since I’ve happily done none all holiday.  I need to decide on a topic for my dissertation asap/by tomorrow.  There’s nothing like a deadline to get one’s butt into gear.  Anyway, I’m sitting at the computer browsing for articles on my potential subject (health education and cardiac patients).  Once I have found what I’m looking for, I go to open the article and the computer system needed won’t allow it!  I’m sure there’s a more technical way of defining the problem but I don’t know what it is.  And there goes my dissertation work.

Next up I decide to go to the gym for the first time in 2 weeks, I look out of the window and it’s snowing (again!).  Of course, I can’t possibly go to the gym.  I’m tired anyway from my lack of sleep last night and from doing very little.  It’s not too cold, however, to go to the supermarket to stock up on food (and eat some of it on the way home).  Yuh, you know how I feel… probs in hibernation mode.

And that sums up my day thus far.  Productive. At least writing and publishing a blog post always makes me feel like I’ve done something.

Yesterday I was feeling camera-ready so I took photos of some of my food highlights.  Here are the best bits:

Lunch was this gem, a jacket potato (which I don’t usually go for) topped with grated raw carrot and guacamole).

Dinner…

…basmati and wild rice, mixed with roasted veg (red peppers, cherry tomatoes, and parsnips).  Accompanied by a green salad (which didn’t go down well at all, weird).

Yesterday was clearly more productive because I made these vegan and low fat chocolate-banana muffins:

Originally I baked 10 but a couple of servings of this happened:

Clearly I’m powerless before anything containing chocolate.

Unpictured food may or may not include numerous apples, a glass of red wine and a substantial amount of dark chocolate.

I haven’t been as snap-happy today so I’m not sure when a post like this will come around next.

    Oh, I love fibre…and miss grains. I LOVE the pic of the crumbled muffin with…ice cream? I’m constantly trying small changes to my diet as well – I’m eating a tiny bit of cheese now and it tastes so good – I’m about to try some lactose free milk, and goats milk as well and thoughts of green tea lattes and ice cream are constantly popping in to my head, haha :-).

  4. I’m all about crumbling up baked goods and mixing them with other delicious treats! I’m rather into mixing muffins with peanut butter and serving them over yoghurt at the moment 🙂

  5. Nice to know that you are feeling better, Sarah! I totally know what you mean when you talk about zero motivation to go to the gym when it snows. We had a brief period of snow where I live and I know you’ll probably laugh considering the amount of snow you get, but during that period I did a lot of yoga at home. It really helped improve my downward dog and overall flexibility you know!

  9. Glad vegan is working out for you again, it makes a huge difference for IBS for me.

    Ugh, sorry about the computer issue, sounds like a permissions issue or a missing plugin.

    I always had motivation issues while going to a gym, hard to push myself to leave the house again after a long day at work. Funny when we got a home gym, I started working out more and my hubby less. 😛

  10. I can’t wait for the recipe for those muffins!

    I wish I could be as productive as you ~ I get so little serious work done in a day it’s a joke, though it’s not for want of trying (read:banging one’s head against a desk or laptop screen).

    Salady fibrousness always sets off my IBS too…which is a pain, because it’s so tasty and nutritious. I think we must be the only people that WANT to eat more veggies but can’t where as for the rest of the general, non-healthy eater / blogger population salads are something foisted upon them.

    Love the idea of a jacket spud with guac. I must try that.

    I used to play The Sims so often…perhaps it’s something I should re-introduce. Thanks so much for the advice. I definitely need to try to switch off more, and calm those racing thoughts.

  13. okay, you just wrote two words that took me back to my grad school days: jacket potatoes and dissertation. ha! Good luck with your disso topic. I’m sure you’ll do fine. I decided to write one at the last minute, I did a quant program so it wasn’t necessary. I really liked the experience of writing it though. My advice to you is to plan ahead and write on a schedule. It’s never too early to start. Everyone gives that advice, but inevitably, students always wait until the last minute =)
