Sick as a dog… and salad dressing

Hi Friends,

I am blogging from my sick bed today; yup even gluten-free, vegans get sick.  I’ve narrowed it down to one of two things- food poisoning (can you get food poisoning from a tofu coconut thai curry?), or a stomach bug.  Whatever it is, it is not pleasing.  However, even though food and I are not on speaking terms right now, I do have this fresh and simple salad dressing to share with you.  My salad dressings of choice are usually vinegar based but I craved a break, and I’m not a fan of creamy dressings.  So I have two alternative dressings for you, which use the same blueprint and are VERY easy to adapt and have fun with.

Fresh herb dressing – Option 1

1 cup of packed freshly chopped parsley
Juice of 1 lemon
1 small shallot, finely chopped
1 fat clove of garlic, crushed
1/3 cup extra-virgin olive oil
scant 1/4 tsp salt
freshly ground pepper, to taste

Whizz all the ingredients together in your food processor or blender, et voila!

Fresh herb dressing – Option 2

1 cup of packed fresh basil
Juice of 1 lemon
1 small shallot, finely chopped
1 fat clove of garlic, crushed
1/3 cup extra-virgin olive oil
scant 1/4 tsp salt
freshly ground pepper, to taste
1-2 tbsp nutritional yeast

Same as above- blend all together with your fave blending appliance and enjoy.  With the nutritional yeast  and basil combo it becomes more like a pesto.

Both of these dressings are quite thick, depending on the quality of your olive oil- I like to use the expensive stuff for salad dressings, when I can afford to!  They’re best stored in the fridge but you’ll need to bring the dressings up to room temperature before serving.

My lunchtime salad today with quickly cobbled together dressing didn’t quite do it for me but these recipes look perfect and I shall now follow them to avoid future salad disappointments!     Thanks for sharing this great recipe with us even though you are feeling under the weather. I always love new salad dressing recipes, and this one looks like a definite winner. So fresh and light, perfect for summer!

    As for the dressings, I’m more of a vinegar person, too. I like to use just vinegar sometimes, but for a change of pace, I’d definitely pour on some of your recipes. Yum!

  8. Ack, sounds like a bug more than anything else. It’s pretty difficult to get poisoning from raw/vegan. It could also be an allergy…. just a thought there.

  10. so sorry youre sick and YES it’s possible to get sick from just about anything, sigh 😦 tofu can go nasty as can coconut meat. hang in there, probiotics to re balance things if you have some to take.

    salad dressing looks great and i hope you enjoy a low key weekend with yoga and mellow times 🙂

  11. i think its so possible to have gotten food poisoning. ive had my fair share of random and weird food poisoning that i wasent sure if it was from a bug or the food! FEEL BETTER LOVE ❤
